Jeremy Kratzer and his wife Marina started operating Dutchman’s, a bagel pop-up housed in a local pizzeria’s cafe space, in November of 2022. The response was overwhelming. The pop-up grew quickly in popularity, with more and more customers making their way toward the Fort Andross Mill Complex in downtown Brunswick, Maine. After four short months, they shared the news that the pop-up would become permanent at its then-temporary location.
Kratzer is a bagel journeyman, having worked at The Purple House in Yarmouth making wood-fired Montreal bagels and Rose Foods in Portland making New York-style bagels before landing at Nomad to start Dutchman’s. His roots and the places where he learned and honed his craft are all reflected in Dutchman’s bagels.
As part of a harmonious relationship with Nomad Pizza, the homemade bagels are baked in a wood-fired pizza oven—a method requiring a bit more care and attention. The results are worth it: delicious, crispy, and chewy bagels that you want to eat any time of the day.
